Should I mention the redundancy in my CV?
Yes, but briefly and in a forward-facing way. One short clause in your opening summary is enough ("Recently exited an X-year role due to restructure"). Don't apologise, don't explain at length, don't leave it unsaid (the gap looks worse than the truth). Cover letters give you more room if needed.
